I tried. I knew that I’d be sorely missing my family, who are all together in Callicoon for Thanksgiving, today.  Pumpkin Pie is the gustatory highlight of Thanksgiving dinner for me (as a vegetarian), so I decided to enact my own virtual Thanksgiving here in Sweden — via pie.  I couldn’t find a pumpkin to save my life, but I did find four butternut squash in the ”exotic foods” section.  They did the trick.  This was my first ever pie crust too.  That’s probably obvious.  It’s homely, but homey.  Happy Thanksgiving to all of you thanksgivers.
